Lavender-Rose Almond Crispers

Created by Chef Rob Corliss on behalf of the Almond Board of California Sliced and chopped natural almonds, quinoa, chia seeds, dried strawberries, rose hips and lavender are blended with a maple mixture and then baked into thin and crispy snack bites to create a unique texture and addictive snack.

  • 3 ounces almonds, natural sliced
  • 2 ounces almonds, natural small chop
  • 2 ounces quinoa, uncooked tri-color
  • 0.60 ounce chia seeds raw
  • 0.60 ounce rose hips, dried cut, seedless, crushed
  • 0.50 ounce freeze dried strawberries small pieces
  • 0.04 ounce sea salt
  • 5 ounces maple syrup pure
  • 0.50 ounce honey clover
  • 0.60 ounce coconut oil liquid
  • 0.10 ounce vanilla extract pure
  • 0.01 ounce lavender, dried crushed

  1. Place the sliced and chopped almonds, quinoa, chia seeds, rose hips, dried strawberries and salt in a mixing bowl and stir to evenly combine. Reserve at room temperature.
  2. Place maple syrup, honey, coconut oil, vanilla extract and lavender in a mixing bowl and whisk to evenly combine. Reserve warm.
  3. Add the maple syrup mixture to the dry ingredients and stir to evenly combine, ensuring that all ingredients are fully and thoroughly coated.
  4. Immediately transfer the mixture into a 1/2 sheet pan lined with parchment paper. Spread the mixture in a thin and even layer (less than 1/4" thickness) across the sheet pan.
  5. Bake in a 275-degree F convection oven for approximately 50 minutes. Finished baked mixture should have an even golden color and be visibly firm/set.
  6. Remove the pan from the oven and allow the baked mixture to cool, on the 1/2 sheet pan, until fully hardened (like a brittle) at room temperature.
  7. Once hardened, break the Lavender-Rose Almond Crispers into approximately 36 rustic pieces and then place in a tightly sealed container and store at room temperature.
